The sun is shining and, at last, we can start to dream of picnics and shore suppers. Here are a couple of all season recipes, moist and crumbly Individual Almond Polenta Cakes and picnic-ready Espresso Almond Blondie bars.

And to brighten up your breakfast table, a recipe for making your own cinnamon swirl bread. (If you've got a favorite dough recipe, just follow the instructions using our Cinnamon Schmear Filling to put a swirl of cinnamon on your breakfast table.)

FROM OUR RECIPE BOX - Individual Almond Polenta Cakes

Almond Polenta Cake
Don't be deceived by the picture. This is not a corn muffin but a delectably crumbly moist almond cake. The addition of cornmeal to the batter gives it a golden hue and delicate crust when baked. Serve these cakes with fresh berries, a dollop of thick yogurt and a drizzle of honey. Rhubarb compote would be an excellent accompaniment. And the batter can be baked in a round cake pan for slicing.

Espresso Almond Blondies
The flavor of almond and coffee blend beautifully in these moist and chewy bars. A touch of espresso glaze adds an extra punch of flavor but can be omitted for a simpler treat. (Chocolate icing would be a welcome enhancement instead.) Rich with chocolate chips, these bars would do well packed in a picnic or in your office lunchbox.

Cinnamon Swirl Bread
Add nutritious whole grains to your diet with this fluffy loaf, fragrant with cinnamon. We've taken bread flour and enriched it with some whole wheat (stone ground preferred) and omega-3 rich flax seeds. A plump layer of Cinnamon Schmear Filling makes an attractive swirl after the loaf is sliced. Served toasted to release its aroma.
