Snow is in the forecast this Valentine’s Eve. Time to think of baking a sweet treat to enjoy in the quiet by the fire. Or, if the sun shines where you live, a picnic may be in order!

Inspiration comes from an old favorite, the peanut-butter buckeye cookie, a cousin to the crunchy hazelnut cookie recipe we’re offering you this month. Recently one fan shared her twist on a popular bar cookie. Linda Sniffen’s cherry cheesecake bars include almond paste in their graham cracker crust.

FROM OUR RECIPE BOX – Crispy Hazelnut-Filled Chocolate Butter Cookies

Choc. Hazelnut Cookies
A recipe in Cottage Living from March of 2006 for a peanut-butter filled cookie caught our eye. Why not adapt the recipe to make a sophisticated version filled with hazelnut cream? This cookie is superbly crisp with pronounced chocolate notes, great for dunking. Chilling the hazelnut filling before forming it into small balls makes it easier to form the cookie. (If you are impatient, you can spread the soft filling directly onto the dough. But be warned. Any time you save will be lost when you try to seal the soft filling into the dough.)
