FROM OUR RECIPE BOX – Crispy Hazelnut-Filled Chocolate Butter Cookies ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
A recipe in Cottage Living from March of 2006 for a peanut-butter filled cookie caught our eye. Why not adapt the recipe to make a sophisticated version filled with hazelnut cream? This cookie is superbly crisp with pronounced chocolate notes, great for dunking. Chilling the hazelnut filling before forming it into small balls makes it easier to form the cookie. (If you are impatient, you can spread the soft filling directly onto the dough. But be warned. Any time you save will be lost when you try to seal the soft filling into the dough.) | |
